Refreshing and healthy frozen treats, these creamy avocado strawberry popsicles are perfect for an after dinner dessert or midday snack.

Step by Step method

  • Step 1

    In a food processor add avocados, maple syrup and lemon juice. Process until smooth.

  • Step 2

    With an electric mixer on medium-high speed, whip the full-fat coconut milk until creamy, about 2 minutes. With a spatula, fold whipped cream into the avocado mixture until combined.

  • Step 3

    In a blender, add frozen and fresh strawberries. Blend until smooth.

  • Step 4

    Pour a layer of avocado mixture first into popsicle molds, then follow with strawberry mixture. Insert wooden sticks into the mold and freeze overnight.

  • Step 5

    Over a double boiler, melt chocolate until smooth. Remove frozen popsicles from the molds and drizzle with melted chocolate. Serve immediately.

  • If using canned full fat coconut milk, make sure cans are BPA-free.
