These delicious and healthy vegan sushi sandwiches are fun and easy to prepare. They are made with brown rice and filled with avocado, red peppers, purple cabbage, and cucumber.
Yield: Makes 8 sandwiches
Rinse rice and place in a saucepan with two cups of water. Cover and bring to a boil. Reduce heat to low. Simmer covered until rice has absorbed all water. Remove from heat and let rice cool for about 10 minutes.
Transfer rice to a large bowl and add rice vinegar. Stir rice to break up lumps. Keep stiring until the rice is almost cold.
Place nori sheets, shiny-side down, on a cutting board. Using damp hands, spread a nice layer of rice over each nori sheet. Spread mashed avocado over the rice on one of the sheets and top with red pepper, purple cabbage, and cucumber.
Place second rice covered nori sheet over vegetables (rice side down). Press down gently and with a wet, sharp knife cut into quarters. Then cut each quarter into 2 triangles to make 8 sandwiches. Garnish with pickled ginger and serve with soy sauce and wasabi paste.
Sometimes brown rice may not stick as well as white sushi rice. I would recommend overcooking the brown rice a bit.
