This three bean chili is delicious, full of flavor and kid friendly! It’s the perfect food to warm you up on cold days. Serve it with your favorite bread or tortilla chips.
Instructions for Pressure Cooker (Instant Pot or other): In a blender add onion, garlic, and diced tomatoes. Blend on high speed for few seconds.
Add beans, cumin, smoked paprika, salt, and blended onion-garlic-tomato mix to pressure cooker, also add enough water to cover the beans (about 3-4 cups). Set cooking time for 25 minutes.
Instructions for stove top: If you are cooking chili on the stove top, I would suggest to soak beans overnight or use BPA-free cans of precooked beans. Blend onion, garlic and diced tomatoes in a blender. Pour into a large cooking pot, add in cumin, smoked paprika, salt, and canned beans. Add about 2 cups of water and bring everything to a boil; reduce heat to low. Cover and simmer for 15 minutes. If using fresh beans, soaked overnight, you may need to add 3-4 cups of water and cook on medium to low heat until beans are tender.
Top with shredded cheese and serve with your favorite bread or tortilla chips.
