It’s squash season so here is a dish that is full of flavor, healthy and deliciously sweet! Filled with maple/cinnamon coated fresh apples, walnuts, and raisins.
Preheat oven to 400°F. Place cut acorn squash, skin side down, on a baking sheet, lined with parchment paper. Brush lemon juice over acorns, sprinkle with sea salt. Bake for an hour or until acorn squash is soft.
Remove acorn from oven and let cool.
In a small bowl, whisk maple syrup, lemon juice, and cinnamon. Add in chopped apples, walnuts and raisins. Mix well.
Fill acorn squash halves with apple-walnut-raisin mixture and serve.
