This bright magenta beet hummus is delicious and flavorful as it looks! Red beet hummus makes a great spread for sandwiches or wraps, use it as a dip for vegetables or just put it on your morning toast. Delish!

Yield: Makes about 1.5 cups


Step by Step method

  • Step 1

    Roast beets in the oven on 400°F for about 35 minutes or until beets are soft. Set aside and let cool.

  • Step 2

    Once beets are cooled, add them to a food processor along with all other ingredients. Process until you reach your desired consistency. If you like hummus to be more smooth, just add more water, one tbsp at a time.
