Tender and delicious potatoes coated with cilantro sunflower pesto. They make an excellent side dish and are very easy to prepare.
Peel potatoes and place them in a large pot of water. Bring the water to a boil over medium heat, and then reduce to a simmer. Cook for about 10-15 minutes or until the potatoes can be easily pierced with a fork. Drain water, remove potatoes and set aside.
In a food processor, add all ingredients for the pesto sauce. Process into a fine mixture. Add the pesto to potatoes and gently toss to coat. Garnish with basil leaves (optional). Serve warm.
