Light and delightful treat, these poached stuffed apples are filled with almonds, chocolate, and dates. They are perfect after dinner dessert. Flavorful and delicious!
Preheat oven to 380° F. Peel and core the apples. Set aside. In a medium bowl combine almonds, chocolate, and dates. Mix well by hand. Start filling apples with almond mixture. Close the bottom opening of apples with a hand while filling the apples, so the mixture does not go through.
In a small bowl mix water and lemon juice, pour the liquid into a baking dish. Place filled apples in a dish and bake for about 35 minutes or until apples are soft.
Place baked apples in the fridge until ready to serve. Garnish with cashew cream or whipped cream and top with cherries.
Do not over bake the apples or they will fall apart. They should be medium soft. Test by sticking a toothpick through the apples.
