Simple mushroom pâté, serve it with crackers, toast or try it as a sandwich spread. Perfect appetizer for any occasion.
Yield: Makes about 1 cup
In a large nonstick pan add chopped onions with 2-3 tbsp of water and sauté on medium-low heat until onions are clear. Add in garlic, mushrooms, soy sauce, thyme, salt and pepper to taste. Cook uncovered until mushrooms are soft and liquid absorbed. Set aside to cool.
In a food processor, add mushroom mixture, parsley, and cashews. Process until smooth. Adjust seasoning if needed. Place mushroom pâté into a bowl, cover and refrigerate for an hour before serving.
