Quick, easy and simple kale miso soup ready in minutes! Very fulfilling and a perfect cold-weather comfort food.
In a large pot add water, miso, garlic, ginger, carrots, kale and scallion whites. Bring to a boil and cook for about 5 minutes.
Lower heat to medium-low, add glass noodles and cook for an additional 5 minutes or until noodles are soft.
Pour soup into serving bowls and top with scallions greens.
