This easy and hearty vegetable pasta soup can be enjoyed anytime of the year. Serve with your favorite homemade bread or naan. It is tasty, flavorful, and satisfying.
In a large pan add onion, garlic, and carrot with 1/4 cup of water. Sauté over low-medium heat until vegetables are soft. Stir in diced tomatoes, water or vegetable broth, apple cider vinegar and basil. Bring to a boil, cover, and simmer for about 15-20 minutes.
Stir in the beans, zucchini, pasta, tomato paste, and season with salt and pepper. Continue to cook, uncovered, for another 8-10 minutes or until pasta is tender, stirring occasionally. Serve warm with your favorite bread.
