These healthy and delicious fruit toasts are refreshing and super easy to make. Paired with sweet vanilla and blueberry cashew cream.
Peel and slice oranges and pitaya (dragon fruit) into rounds.
In a blender add soaked cashews, maple syrup, vanilla extract and plant-based milk. Blend on high speed until smooth. Remove only half of cashew cream and set aside. Add in blueberries and blend again until well combined.
To assemble: take an orange and pitaya rounds and spread the cashew vanilla and blueberry cream. Top with strawberries, blueberries, oranges and sliced almonds. Garnish with coconut.
Pineapples, apples, and grapefruit also make great toasts.
If you forget to soak cashews overnight, just soak them in hot water for 30 minutes, and they should soften up.
