These healthy and delicious fruit toasts are refreshing and super easy to make. Paired with sweet vanilla and blueberry cashew cream.


Step by Step method

  • Step 1

    Peel and slice oranges and pitaya (dragon fruit) into rounds.

  • Step 2

    In a blender add soaked cashews, maple syrup, vanilla extract and plant-based milk. Blend on high speed until smooth. Remove only half of cashew cream and set aside. Add in blueberries and blend again until well combined.

  • Step 3

    To assemble: take an orange and pitaya rounds and spread the cashew vanilla and blueberry cream. Top with strawberries, blueberries, oranges and sliced almonds. Garnish with coconut.

Tips & variations

  • Pineapples, apples, and grapefruit also make great toasts.

  • If you forget to soak cashews overnight, just soak them in hot water for 30 minutes, and they should soften up.
