This amazing date sweetened zucchini oat bread is healthy and simple to make. It is moist and packed with freshly shredded zucchini and chopped walnuts. Great for breakfast or dessert!
Yield: 1 loaf
Preheat oven to 350° F and line a 9" x 5" bread pan with parchment paper. In a small cup, mix ground flax seed with the water, and leave it aside until it becomes sticky, about 5 minutes.
In a bowl, add apple sauce, vanilla extract, baking soda and baking powder, stir well. In a separate bowl add the oat flour, sea salt, cinnamon, nutmeg and mix well.
Combine wet ingredients with dry ingredients and stir well. Add in shredded zucchini (squeeze any excess water), chopped dates and walnuts. Stir until well combined.
Pour mixture into prepared loaf pan. Bake for about 50-60 minutes, or until a toothpick runs clean. Let the bread cool down completely before serving.
You can make your own oat flour by using rolled oats. Just place oats in a blender or food processor and process it into a powder-like consistency.
