Simple and easy creamy cashew coleslaw recipe made with green and red cabbage. It’s a perfect side dish for any meal!
In a large bowl combine together shredded cabbage and carrots.
Drain and rinse soaked cashews. Place cashews in a blender with apple cider vinegar, water, Dijon mustard, lemon juice and salt and pepper. Blend on high until creamy.
Pour cashew dressing over the salad and mix well.
