This hearty and protein rich chickpea stew gets its very flavorful taste from tomatoes, turmeric, and cumin. You can eat it as is with a side of warm naan bread or you can also serve it over steamed brown rice or quinoa. It is delicious, and kid friendly.
In a food processor add diced tomatoes, ginger and onion. Process until puréed. Set aside.
In a large saucepan over medium heat, add 2-3 tbsp of water, garlic and smoked paprika. Cook until garlic is soft. Add in tomato-ginger-onion purée and mix to combine. Add in remaining ingredients and bring to boil. Reduce heat to low and simmer until thickened into a stew, about 30 minutes.
