Delicious and healthy Asian soba noodle soup is loaded with nutritious vegetables such as kale, mushrooms, broccoli, carrots and snow peas. Also, it is very easy to prepare, and it is oil and gluten-free!
In a large pot add water or vegetable broth, garlic, ginger, miso and sea salt to taste. Bring to a boil then lower heat to medium-low. Add in mushrooms, broccoli, carrot, kale, snow peas and green onions (white parts), cover and simmer for about 15 minutes. Stir in soy sauce.
In a separate pot bring water to a boil. Cook the soba noodles according to package directions, about 4 minutes. Drain noodles and place them in serving bowls. Pour vegetable soup over noodles and garnish with bean sprouts, green onions (green parts), cilantro and sesame seeds.
Tofu also goes great with this soup.
You can add other variety of vegetables such as bok choy, spinach or cabbage.
